Walnut oil is extracted from Persian walnuts (Juglans regia). Every 100 g of this oil contains approximately 63.3 g of polyunsaturated fatty acids, 22.8 g of monounsaturated fats, and 9.1 g of saturated fats, with no cholesterol. Unlike most nuts, which are rich in monounsaturated fatty acids, walnut oil is predominantly composed of polyunsaturated fatty acids (72% of total fats), including 14% alpha-linolenic acid and 58% linoleic acid, along with 13% oleic acid.
